An All-Star Team!
AES is excited to announce their new all-star culinary staff. From left to right: Anil Singal (Assistant Food Services Manager), Sunil Kumar (ES/MS Cafeteria Chef), Lalit Mehta (Bakery Chef), Surender Kumar (HS Café/Kiosks Sous Chef), and Vivek Ahluwalia (Food Services Manager).
Anil Singal is responsible for all logistical aspects of our food services including raw material procurement. Anil has been particularly busy sourcing fresh, organic and imported foods. He is also responsible for the implementation of the new POS (Point of Sale) cashless system we are introducing at the HS Café, kiosks and staff canteen. Anil’s other major initiative is food safety and health & safety compliance. Anil’s major asset is his never-say-no attitude.
Sunil Kumar joined AES in mid-March as ES/HS Cafeteria Chef. Previously, Sunil worked in the luxury cruise industry and several specialty restaurants in Delhi, where he fine-tuned his love for cooking Western, Mediterranean and TexMex cuisine. Sunil’s cheerful disposition really stands out particularly when he interacts with our students at lunchtime. He is always ready for a new challenge!
Lalit Kumar Mehta joined AES a month ago as Bakery Chef following 25 years in the Confectionery Department of the Taj Group of Hotels. His vision is to provide desserts that contain more fruit and milk, and less carbohydrates and sugar. He is adept at introducing many wonderful patisserie items and we all look forward to the Christmas pudding he is planning to bake! He has already introduced new varieties of bread. Lalit is a hands-on chef who loves to teach our staff the finer techniques in baking.
Surender Kumar is excited to be the new HS Café/Kiosks Sous Chef. He joined AES earlier in the school year. He has been busy interacting with our HS student body and has been introducing many new menu items there in close consultation with them. Surender has twelve years of experience as a chef. Most recently he worked four years at the Aman in Delhi. His team spirit, love of food, and gentle demeanour has already made a difference in the quality of the food served at the Café and kiosks.
Vivek Ahluwalia, our Food Services Manager, has spent 26 years serving the students and staff at AES! He works tirelessly to blend our 57 chefs, cooks, stewards and helpers into an enthusiastic, positive and smiling team. This is a recipe for success at AES.
